Blue Oyster Mushroom (Pleurotus ostreatus)

Blue oysters have a tender, meaty texture. They have a buttery flavor. By far, one of the most versatile oyster mushrooms. We really enjoy them with red meats.

PoHu Oyster Mushroom (Pleurotus ostreatus)

PoHu’s have a tender, meat-like texture. They offer a rich, buttery, flavor. They’re extremely versatile and a great addition to any dish.

Summer White Oyster (Pleurotus ostreatus)

Also known as Pearl Oysters, they have a fresh, woodsy smell. They have a tender texture with a sweet, cashew-like, flavor.

Golden Oyster Mushroom (Pleurotus citrinopileatus)

Not only are Golden Oysters beautiful, but they are flavorfull as well. Pairs well with poultry, seafood, steak, cilantro, thyme, parsley, rosemary, taragon, garlic, onion, leek, fennel, arugula, white turnip, and asparagus.

Black Pearl King Oyster (Pleurotus ostreatus/eryngii)

Our newest oyster variety. The texture is similar to a meaty portabello, with a mildy sweet flavor. The caps are large, and can easily be stuffed.

King Oyster Mushroom (Pleurotus eryngii)

King Oysters have a very mild flavor, however, they are excellent at absorbing other flavors. The texture is similar to a water chestnut. Kings are used in a lot of vegetarian dishes as a meat substitute.

Pink Oyster Mushroom (Pleurotus djamor)

Pink Oyster mushrooms tend to be more pungent and woody, have a tougher texture, with a slight flavor of ham.


 
 

Other Varieties

Chestnut Mushrooms (Pholiota adiposa)

Chestnut mushrooms have a very fresh, woodsy, smell to them. They have a rustic, nutty, mildly sweet flavor. The texture of the cap is meaty while the texture of the stem is snappy, similar to cooked asparagus.

Shiitake Mushrooms (Lentinula edodes)

Shiitakes have a meaty texture. Cooking brings out their earthy, smokey flavor.

Lion’s Mane Mushroom (Hericium erinaceus)

Lion’s mane has a taste and texture similar to lobster. Lion’s mane has gained popularity not only for it’s coronary delight, but for it’s health benefits, including improved cognitive functions and repairing nervous system damage.
